Q & A: Special Food Needs
Q:
A member of our contingent is lactose intolerant. Are
there are special meals available at NOAC, and
who do we need to contact about it?
A:
So far, the NOAC 2000 Food Manager has received about 60 requests
for special meals or other special food
considerations. UTK tells us that they are able to
accommodate virtually all special meal requests in
any of their dining halls.
For those who are
lactose intolerant, they tell us that there should
be no problem as long as
they stay away from the obvious milk, ice cream,
puddings and creamy looking
soups and casseroles. Our contact is checking as
to whether they put milk
in their mashed potatoes.
The exception to this is Kosher. Kosher participants
will eat in the staff dining facility because that is the only
place that this menu will be available. We did not
collect special meal requests from staff members in
advance. Therefore, it would be best if
those staff members requiring
Kosher meals corresponded with
Jay Schnapp,
in advance. This would help us be sure of
our meal count. Also, these
staff members should make their
Kosher food request known at the time
of arrival on campus to register.
It is noted that 'The Nine Days' begin on
the night of July 31, and meat
meals will not likely be available
after that time.
